Segment 1: Boddhi Naturals SCOBY and Preparation
- Boddhi Naturals SCOBY, thick with liquid, is recommended to be used as soon as possible upon arrival. Refrigeration is not recommended.
- Utensils needed: wide-mouth pint or larger jar, wood or plastic spoon, plastic/nylon strainer, and another pint-size or larger container for storing the finished kombucha.
- Ingredients needed: mushroom and starter tea from the Boddhi Naturals SCOBY package, water (well or filtered), white sugar (4-6 spoons), regular green or black tea (no decaffeinated or flavored).
- Prepare the tea by boiling water, adding sugar, and stirring until dissolved. Add tea bags and let it cool to room temperature before removing the bags or straining the tea.
- Place the Boddhi Naturals SCOBY and starter tea into a glass jar, leaving an inch of space at the top. Cover the jar with a cloth secured by an elastic band.
- Allow the kombucha to ferment for 5-7 days in a cupboard outside of direct sunlight, maintaining a temperature between 70-85°F. Avoid excess moisture or nearby plants that may lead to mold growth.
- After 5 days, check for mold on top of the kombucha (a rare occurrence). Use a straw to taste the kombucha, and if it's too sweet, leave it for another day or two.
- Filter the kombucha, reserving 10% as starter tea for the next batch. Remove the Boddhi Naturals SCOBY using a plastic holder or clean hands.
- Start the next batch from step 1 and either drink the kombucha or store it in the refrigerator with a closed lid.
Segment 2: Flavoring and Caution on Consumption
- To flavor the kombucha, add your favorite flavors such as grapes, ginger juice, or lemon juice.
- If using ginger juice or lemon juice, add 4 spoons for every liter of kombucha into a swing-top bottle. Leave it at room temperature for 2-3 days to become fizzy and develop more alcohol.
- Exercise caution when consuming kombucha, especially if you're new to it. Start with 2 spoonfuls and gradually increase the amount to allow your system to adapt to the high levels of beneficial bacteria and yeast.
- If you're sensitive, drink kombucha with food.
